I love ice cream! I always have, and I’m sure I’m not alone..
I’ve never been able to keep ice cream at home, it’s the one thing that if I know I have it I will crave it, and if I open it –it is gone! Doesn’t matter if we are talking a gallon worth..
Ice cream also makes me sick, I feel nauseous and get very bloated…sometimes worse 😐
So as many others, paleo ice cream was one of my first tries at a paleoish recipe. It’s sooo simple and tastes amazing, and can be done in all the wonderful flavors that is regular ice cream 🙂 (with more or less paleoishness that is)
So the basic recipe is:
• 2 bananas, frozen
• Creamy coconut milk, 150ml?
Mix in blender/food processor until smooth, add Stevia or vanilla for sweetness.
The broken down recipe for PERFECT paleo ice cream is:
• 2 bananas, frozen
Cut in slices and frozen in a plastic bag, try to separate them so it will be easier on the blender later. Use ripe bananas, they can’t be too ripe basically. If your bananas aren’t ripe enough you might wanna add some Stevia or other sweetening, also green bananas don’t make the creamiest ice cream. I keep bananas on the counter, when they get too ripe I cut them up and keep them in the fridge. They can stay there for months.
• Creamy coconut milk, 150ml?
You know how we categorize dairy with 2%, whole milk ect? Well that doesn’t exist for coconut milk! Very annoying, but deal with it. The point here is that you want a very rich creamy coconut milk. Read the back! Now why the question mark behind 150ml; you will get the best result if you pour it in slowly and watch for the perfect consistency (which is creamy but no lumps, duh!). there is so many factors on moisture; ripeness of banana, how frozen they are, if you’ve de-iced your freezer, blender you use, and type of coconut milk… so, about 150ml, but I always pour it in a bit at the time and let the blender work it in before adding more.
So you take out your frozen banana slices, put them in your blender or food processor. You need a strong one! You can use a strong hand held, they are actually great for this, but a standalone blender or food processor is less work 🙂 I use a food processor, cause it’s the least amount of work. . .
Pulse the bananas alone a bit. They will crumble up and you will need less coconut milk to get a smooth ice cream. Pour the coconut milk in slowly and stop when you have a smooth texture. If you pour in too much it will be a runny ice cream, try putting it back in the freezer for 15-30 min to save it from being a milkshake.
My favorite flavor is to add 100% cacao powder and top with nut butters. Any dry powder should be mixed with a bit of the coconut milk, to ensure you don’t get lumps.
