I love me a sweet breakfast! I used to eat these paleo pancakes every day for breakfast before I exchanged them for paleo protein pancakes (I’ll post them too I promise) since the macros fit my diet better. #IIFYM
I still make these though, and where the protein pancakes can be a bit too heavy for some, I’ve never found anyone to not like these babies.
Pancake batter:
- 2 eggs, preferably organic for a beautiful yellow batter
- 1 ripe banana
- 3 semi tbs almond flour
- 2 semi tbs coconut flour
- Optional choices: stevia for sweetness, blueberries or chocolate chips.
Combine all ingredients in a bowl and run a hand blender through it until smooth. Heat your pan to a medium-low heat and use some coconut oil or butter for frying. Make small pancakes with about 2tbs batter and make sure they are not too thick to cook through. When the pancakes are set and golden flip over. The batter is a bit loose, so be careful when flipping.
I love my paleo pancakes plain with nut butter, but the chocolate chip pancakes are great too!
